Description for "charcoal grilled in Kanji"
A dish in which the ingredients are grilled over an open flame using charcoal fire that was created using charcoal as fuel. Charcoal fire emits far infrared rays four times as much as gas, and radiant heat directly burns ingredients. In the case of gas containing hydrogen, it generates water vapor. Charcoal, on the other hand, does not generate steam and emits only carbon dioxide, does not give excess water to the ingredients, and can be baked with a strong taste and rich flavor. That’s why it tastes good just by grilling it over charcoal. Japanese said “Sumi bi yaki”.
